Japanese Cast Iron Pan with Detachable Handles

This Japanese cast iron pan moves from stovetop to oven to table, handling searing, roasting, and baking in one vessel, then coming straight to the table to serve. Its wide, shallow form suits everything from a frittata or roasted vegetables to a skillet dessert, holding heat evenly and keeping food warm once set down. The two ring handles detach, so the pan slides easily in and out of the oven and stores flat without them.

The pan comes from Nihonbashi Kiya, established in 1792 in Tokyo's Nihonbashi district and a household name in Japan for its cutlery and kitchen tools. Cast iron holds heat densely and evenly, and this pan builds a natural seasoning with use, improving the longer you cook with it.
