Japanese Whetstone & Holder Set

Keep your knives sharp with this Japanese whetstone and holder set. The #800 medium-grit stone is made for regular knife sharpening, restoring a keen edge before a knife dulls too far. The wooden holder cradles the whetstone so it stays in place as you work.

How to use:
Soak the whetstone in water for about 20 minutes before use, until the bubbles stop. Do not submerge the wooden holder, as it may lose its shape. Set the whetstone into the holder so it stays steady as you sharpen. Hold the knife at a steady angle and draw it slowly back and forth. A muddy paste forms as you sharpen; leave it on the stone rather than rinsing it away, as it helps bring up the edge. Sharpen one side until a burr forms along the edge, then work the other side. Rinse and dry the knife when finished.

For everyday use, a medium-grit water stone like this is enough. Sharpen every few months, or whenever a knife starts to drag rather than cut.
