Sourced from carefully cultivated Tartary buckwheat in Shimane Prefecture, this Sobacha is crafted from rare, high-quality Soba grains. Shimane’s Izumo Soba is renowned for its exceptional depth of flavor and craftsmanship, standing alongside Togakushi Soba from Nagano and Wanko Soba from Iwate—three regions celebrated for producing Japan’s finest and most distinct soba.

Unlike traditional tea, Sobacha does not originate from the Camellia sinensis plant but is instead composed of roasted Tartary buckwheat. This grain, first domesticated in East Asia, continues to be widely cultivated in China, Tibet, South Korea, and Japan. Tartary buckwheat is distinguished by its smaller size, thinner husk, and an exceptionally high concentration of rutin—nearly one hundred times that of common buckwheat. Rutin is a flavonoid recognized for its potential benefits in supporting circulatory health and vascular function.

Expertly roasted to perfection, this Sobacha enhances the inherent sweetness and deep aroma of buckwheat, yielding a caramel-like, toasty character with a natural sweetness. How to brew:
- Use 6-8g of soba (2 servings)

- Add 300ml of 190-200°F water
- Steep the tea for 5 minute.
