Good Knives Are Made by Hand. With such a motto, it is no surprise that this historic knife manufacturer, based in Solingen, Germany, has maintained its reputation for producing the highest quality knives since 1872. In fact, most of their knives are still produced in exactly the same way as they were 140 years ago. Each blade is crafted using a special grinding technique, which follows the principle of “Kesselscher Walkschliff,” Solingen dry fine grinding, that employs a grinding angle that is much farther up on the blade than that of most common knives today, tapering the knife to an extremely sharp and long-lasting cutting edge. The final step of the grinding, out of more than 67 stages of production for each knife, is a special process called blue glazing—one of the most time-consuming and complex grinding techniques that can only be applied by master grinder—which leaves each blade with a bluish tone and an extremely smooth surface. Each blade has a hardness level of 60 HRC, which is exceptionally high for stainless steel. Most steel blades only measure around 55 HRC, for example, and even carbon steel blades only come up to a level of 61.5 HRC. The handle is hard and durable as well, as it is made from plum wood, with beautiful colors ranging from a pink-hued light brown to a dark brown with a violet shade.
