Hinoki Cutting Board

These cutting boards are made from 200 year old hinoki cypress felled in the Kiso District of Nagano Prefecture, an area is known for its high-quality production of hinoki goods. The straight, regular grain speaks to the density of the block, and this attractive finish also makes it a practical surface in the kitchen as the soft, smooth surface is less likely to dull a knife blade. Hinoki also contains natural resins that make these boards anti-bacterial, mildew resistant and give them a light, citrus scent. As a result they are highly sought after, and often used by chefs in Japan.

Item details: Available in two sizes, these chopping boards are designed to accentuate the naturally useful features of Hinoki wood, while remaining a refined and attractive object to use. They are made using a single plane of wood, and are cut using a particular technique that seals the wood-grain to further strengthen its already durable and resistant surface.

Care Instructions: Before use, the manufacturer recommends lightly moistening the surface of the board. To maintain the finish and surface they recommend scrubbing the surface with baking powder or salt, using a tawashi, a Japanese scrubbing brush. Avoid leaving the cutting board under direct sunlight to prevent warping and do not leave to soak in water for long periods of time. Following these steps will prevent excessive discoloration and food odors from seeping into the wood.
