This cutting board is made of a 200 year old Japanese cypress called Hinoki from Kiso, an area historically known for its high quality hinoki. Because of its high value, cutting hinoki in this area was regulated. These boards are often used by chefs in Japan due to its natural antibacterial characteristic, light weight, and natural fragrant scent. Avoid leaving the cutting board under direct sunlight to prevent warping. Do not soak board in water for a long time. Use mild soap or coarse salt to clean board. Rinse with hot water then dry thoroughly.
