Good Knives Are Made by Hand. With such a motto, it is no surprise that this historic knife manufacturer, based in Solingen, Germany, has maintained its reputation for producing the highest quality knives since 1872. In fact, most of their knives are still produced in exactly the same way as they were 140 years ago. These knives, for example, are true to an original design from 1922, and are made of high-grade carbon steel. Each blade is crafted using a special grinding technique, which follows the principle of “Kesselscher Walkschliff,” Solingen dry fine grinding, that employs a grinding angle that is much farther up on the blade than that of most common knives today, tapering the knife to an extremely sharp and long-lasting cutting edge. The final step of the grinding, out of more than 67 stages of production for each knife, is a special process called blue glazing—one of the most time-consuming and complex grinding techniques that can only be applied by master grinder—which leaves each blade with a bluish tone and an extremely smooth surface. This knife features a plum wood handle with brass rivets.

Carbon steel blades will keep its sharpness better than a stainless steel. However, without proper care carbon steel knives may rust easily. Make sure you keep them dry.
