This sturdy cast iron kettle not only retains heat well but also distributes heat evenly. The uniquely rounded, raised shape of this kettle is called "ubaguchi" and is one of the kettle shapes particularly used for tea ceremonies. The iron material of this kettle softens water when boiling, lowering chlorine levels and enriching it with iron ions, which amplify the flavor and aroma when brewing Japanese tea.
This kettle is compatible with electric, induction, and gas stoves.
When using on open flame, always use low heat to maintain its quality.
Care instructions:
For first time use, boil and discard water several times. The natural coating inside may discolor the water but this is normal.
Rust will occur if any moisture remains on the surface of the kettle. To prevent this, pour out all water after each boiling and open the lid to allow steam to escape. In the case of rust, boil some green tea leaves in water over a fire for a while, then dry thoroughly to restore the kettle's original black color. With regular usage, a scale will form on the kettle's interior that works as a protective film.
